Blooming Marvellous Cakes on Instagram: "I pretty much get asked everyday about buttercream, so….. 🧁 I use American buttercream with 3 ingredients; Block butter (my preference is salted) Icing Sugar Vanilla 🧁 I use a stand mixer with a PADDLE beater. Currently using a Kenwood as I prefer the splash guard. 🧁 I add my icing sugar in 2 batches and only mix enough to just combine ingredients. 🧁 I don’t add milk or water. You want a fairly stiff buttercream for petal definition. When buttercream gets too warm either in piping bag or bowl, pop back into fridge. Working with small amounts of buttercream at a time also helps. Over low heat, mix sugar in water and let it dissolve completely. As soon as it is dissolved, take it off heat, strain the liquid and let it cool completely. - Now Cut your cold butter in cubes and leave it outside the fridge for a few mins till it softens a bit. You should be able to squish it with your fingers though it should be somewhat firm when you hold it. It shouldn’t be too cold nor melting. - Start beating the butter at low speed with a beater and gradually increase the speed to medium high. Beat it till it turns pale white and has doubled in volume. - Now start adding the strained and cooled sugar syrup into your beaten butter in stages. After each addition, whip the butter and liquid till it is completely mixed. 🌟Note: Let the Syrup Cool Completely Before adding to butter. - Once all the syrup is added, the buttercream will look liquidy. Don’t worry, just keep beating it.
