Cake Ingredients
• Lemon Cake Mix
• Replace 1 cup water with 3/4 cup milk and 1/4 cup lemon juice
• Replace oil with equal parts melted butter
• Add lemon zest
Divide cake batter into (2) 9x13 baking pans - creating thin layers. Bake for approx 20 mins or until toothpick inserted in middle comes out clear.
Icing Ingredients
• 4 cups confectioners’ sugar
• 2 sticks unsalted butter, softened
• 3 Tbsp heavy cream
• 3 Tbsp hibiscus syrup
• 1 Tbsp lemon juice
• Zest of one lemon
With hand held mixer or stand mixer beat butter until smooth and creamy. Add confectioners’ sugar, heavy cream, hibiscus syrup, lemon juice and lemon zest. Combine until smooth.
Assembly: Use 4oz mason jars to serve. Use mason jars to cut cake circles. Layer cake then icing (and repea
