Ingredients:

2 lbs ripe tomatoes, halved
1 onion, quartered
4 garlic cloves, unpeeled
2 tbsp olive oil
1 tsp sea salt
1/2 tsp black pepper
2 cups vegetable broth
1/4 cup fresh basil leaves
1 tsp balsamic vinegar (optional)
Instructions:
1️⃣ Preheat oven to 400°F. Arrange tomatoes, onion, and garlic on a baking sheet. Drizzle with olive oil, salt, and pepper.
2️⃣ Roast for 25-30 minutes until tomatoes are soft and slightly charred.
3️⃣ Remove garlic peels and transfer everything to a blender. Add vegetable broth and basil. Blend until smooth.
4️⃣ Pour into a pot, add balsamic vinegar (if using), and simmer for 5 minutes. Adjust seasoning and serve hot!
