In honor of Hispanic Heritage Month, I’m partnering with Swift meats to bring you some of my family favorites.

Ingredients:
- 3 lbs chuck roast, cut into 2-3 inch pieces
- 2 lbs short ribs
- 1 lb beef shank
- 1 head of garlic, cut in half
- 1 whole onion (keep the root on)
- 4 tbsp salt
- 11 qt water
- 3 ears of corn, cut into chunks
- 2 chayotes, peeled and chopped
- 2 Mexican zucchinis, sliced
- 4 carrots, peeled and chopped
- 10 small potatoes, unpeeled
- 1 bunch of cilantro
Serving Size: Makes about 8 servings
Cooking Time: Approximately 2.5 to 3 hours
