Jessica on Instagram: "ZEPPOLE ~ ZIPPULI CALABRESI ṞÊÇÏPĘ✍️ A tried and tested AND approved recipe from my Calabresi family ( my inlaws) Makes around 30 pieces 1 large potato 500g plain flour 1 sachet dry yeast (7g) 1 tablespoon salt 2 cups warm water Vegetable oil for frying Anchovies (optional) 1.Boil potatoes in salted water, drain and mash once slightly cooled 2. Add 1 cup warm water to a jug and stir in the yeast and leave to activate til frothy (about 10-15 mins) 3. In a small bowl add another cup warm water and stir in the salt to dissolve 4. In a large bowl add the flour and mashed potatoes, add in the water that has the yeast, start mixing with your hands. Once that all added in start adding the water/salt mixture ( you may not need it all but I used the whole 2 cups) K
