The idea for this salad came to me when we ordered a restaurant appetizer that was prosciutto, burrata, a little arugula and olive oil. I was inspired to make it into a salad with just a few more ingredients. Instead of pears, try the salad with melon or peaches.

Ingredients:
3 large d’anjou pears
1 ounce micro greens or arugula
3 slices prosciutto
7 ounces bufala mozzarella
1 tbsp honey
2 tbsp olive oil
¾ tsp flaky salt
A few pinches of chili flakes or aleppo

-Cut each pear on both sides of the core. Use a the thinest setting on your mandoline to slice the pear. 
-Grab a 11 inch round circular serving plate and layer the sliced pears, micro greens, prosciutto, bufala mozzarella as show. 
-Just before serving season with salt and chili flakes and drizzle on honey and olive oil. Serve with toasted bread!
