A sourdough ratio compares the WEIGHT of starter to flour to water. Sourdough starter is a living organism. It requires food (flour) to keep it happy and fed. The amount of flour you feed it will directly impact when your starter will peak and be ready to use. The more starter you carryover/feed, the quicker the starter will peak.
