Spring Tea

I had a Spring Tea on Saturday, it was a lot of fun!  I invited a few ladies to come over and we wore our Spring dresses and hats.  Of course I had to wear one of my vintage hostess aprons!
 My friend Clarissa gave me the carnations and my friend Carol gave me the lacey mat under them!  That was so sweet!
I used my mug rugs under the tea cups and gave one to each of my friends who came.


 For dessert I made Cherry meringue dessert, I got the recipe from Taste of Home years ago and made individual desserts with the meringue.  (recipe here) I only had four green napkins so my napkin was yellow.  :)

There were five of us.  Clarissa said next time to ask people to help with the food, that would make it easier and cheaper!  LOL


 This was my food table.
I did not really like the cucumber sandwiches but did like the pineapple, pecan cream cheese sandwiches, they just needed some more pecans.  4 oz cream cheese, a drained small can of crushed pineapple and I would put at least 1/2 cup to 1 cup of chopped pecans.  I also made balsamic strawberries with whipped cream.  Yum!  (recipe here)

I have decided to have a tea every Spring and Fall.  I think the one in the fall might be a whimsical Mad Hatter party.

Chocolate Strawberries

I'm a little behind in posting this with Valentine's day being tomorrow, but chocolate covered strawberries is something I enjoy year round!  My husband thought it would be neat to buy me chocolate covered strawberries from Pulakos in Erie, PA.  I loved their chocolate when we lived there.  It would have been $25 for a dozen plus $50 in shipping and handling, $75 for 12 strawberries!  I told him I could make my own and they would be freshly made each day I ate them! Just takes a couple of minutes to make!   Of course Pulakos is the best, but for convenience I used Wilton candy melts. You can buy these at Wal-mart or your local craft store.

First thing you do is wash and thoroughly dry your strawberries.
Melt your chocolate and stir at 30 second intervals until completely melted.  I hold the strawberries by the leaves and dip until completely covered.

 Please excuse my pajamas!

Place on parchment paper until cooled.
Then eat them!
My husband also bought me some live roses, when it warms up I'll plant them in a bigger pot outside.
We are going to Springfield, MO (an hour away) tomorrow for Valentine's day.  What are your plans?

When is a cake not cake?

Or when is dirt not dirt?  When it is dirt cake!  This is one of my most favorite recipes, good old fashioned Southern dirt cake!  This is the first recipe I put in my cookbook when I was 16!  I got the recipe from Mrs. Virginia Cook, a dear sweet lady from my church.

Dirt Cake
1.  Mix together:
     1 8oz package cream cheese
     1 stick of butter
     1 cup of powdered sugar
     1 small container of Cool Whip

2.  Mix together in a separate bowl:
     1 small package instant vanilla pudding (last time I used white chocolate, or plain chocolate is also         good.)
     1 1/2 cups cold milk

3.  1 package Oreo cookies
      - crush in food processor (or ziplock baggie using a rolling pin)

*  Mix 1 & 2 together.  Keep Oreos separate.  Layer the filling on the bottom and Oreos on top, one after the other.  I made a total of four layers, make sure you end up with cookies on top.

*  This looks really good either topped with gummy worms or in a flower pot with a fake flower stuck in it.

Easy Strawberry Shortcake

I wanted to share a recipe my mom taught me as I was growing up. 
 It is super easy and my favorite dessert!  
Strawberry Shortcake!
Well, maybe not that Strawberry Shortcake, even though she was my favorite character and I had everything Strawberry Shortcake!  Maybe it was the red hair since I'm also a redhead?  Or maybe the strawberries, after all when I got married my kitchen theme was strawberries.

But I digress, making strawberry shortcake is actually super simple!
First, slice your strawberries, it does not have to be perfect just in sizes easy to eat.  
I used about a pint.

Second, sprinkle your sugar over half the strawberries, put the other half on top and sprinkle those.  How much sugar you ask?  That's a good question!  I use about half a cup, more if your strawberries are not sweet. Just be sure there is enough to cover the strawberries. Cover and put in the fridge.  Stir, in about 30 minutes.  You want it to sit for about two hours or overnight, stirring occasionally.  The sugar soaks into the strawberries and makes the syrup.

You can either make your own shortcake recipe or use angel food cake.  
I cheat and use the shortcake cups at the grocery store.

Put the strawberries and syrup on your shortcake.

Dollop with whipped cream.  Here is my recipe for whipped cream, althugh I did cheat again and used Cool Whip!  LOL

Easy Yummy Breakfast


I love waffles and I love cinnamon rolls from a can, so can you imagine making those cinnamon rolls in a waffle iron!  Yum-o and super easy!

First put the cinnamon rolls in the waffle iron.
 Cook about 3 minutes or when they are done since each waffle iron is different.
 Cover with the icing!  Chris surprised me with the orange ones the other day, I love them.  I also love the Hershey chocolate ones!
I saw this on I think Facebook but have no idea who to credit the idea with, I'm sure there are lots of people who have come up with this idea before.

Remember me talking about the goats and the small town thing the other day?  Well, I unexpectedly now am trying to find homes for 2 dogs, a goat and a chicken!  The goat sleeps with the dogs and when I take the dogs for a walk, the goat follows us!  I really do need to find a home for them because I do not have a fence around my yard and have to keep the dogs chained up, which I hate, and I don't have dog houses for them, but they are big dogs and have never been indoors before.  I'm a strictly indoor pets type of person so this is just killing me having to leave them outside.  If you know anyone in Missouri or Mountain Home, AR area looking for a couple of sweet puppies and a goat please let me know!

Thursday is Thanksgiving! This is my husband's favorite holiday and sometimes his birthday falls on Thanksgiving! Here is a turkey cake I made him one year:

Here is another old recipe I wanted to share with you again, since I moved last week, I'm pretty busy right now!

I made a lot so I could can it, only to find out, after I had it in the water bath canner, that it HAS to be done in a pressure canner!  I put them in the freezer after they cooled down.  Make sure you leave plenty of room for expansion if you freeze your jars, or they will break the jars!  Ask me how I know!  LOL
-4 15 oz cans or 6 cups of pumpkin.  I used organic pumpkin puree.
-4 cups vegetable broth, I used one box you can also use chicken broth.  Go for the organic, stores like Whole Foods, Central Market and HEB have it for $2!  I stock up when I go to one of those stores.
-3 cups water
2 yams or sweet potatoes, peeled and chopped
since sweet potatoes are so hard to cut, I used my mandolin slicer and then chopped it.
-3-4 chopped garlic cloves, I used my garlic press
1 T sugar (I used palm)
1 tsp ginger
3 tsp kosher salt
1 tsp tumeric
1/2 tsp allspice
1/2 tsp nutmeg
1/2 tsp cumin
1/4 chopped onion (optional)
heavy whipping cream
Put it all in the crock pot.
Cover and cook on low for 8 hrs (if you don't have that much much time you can cook it on high for one hour to get it started, then turn it to low.
If you have in immersible blender use that (I really want one of these!) I scooped out the chunks and put them in my blender and blended until smooth.  Don't put the lid all of the way on the hot liquid, or it might explode, I tilted the middle insert of the lid to let steam escape.
I made a mess, but it sure is delicious.  I also have extra made and in my freezer for future lunches!  Not to mention how healthy this soup is.  With sweet potatoes, pumpkin and garlic - you can't go wrong!
My friend Marie told me that she does not like pumpkin, but after tasting my soup she changed her mind.

Healthy Pumpkin Spice Cupcakes

I am revisiting some of my old posts to share this fall season!

I made them for church and made them "healthier".  I was surprised how delicious they turned out with wheat flour!
Here is the revised recipe:
Pumpkin Spice Cupcakes

1 Can (15 oz.) pumpkin (about 2 cups)
2 Cups sugar (I used palm sugar)
1 Cup vegetable oil (I used grapeseed oil)
4 eggs, slightly beaten
2 Cups flour (I used 1 cup hard white wheat flour and 1 cup organic whole wheat pastry flour)
2 tsp. baking soda
1 tsp. ground cinnamon
1 tsp ginger
1/2 tsp allspice
1/2 tsp. salt

Combine flour, baking soda, cinnamon, and salt. In large mixing bowl, beat pumpkin, sugar, and oil. Add eggs and mix well. Add the dry ingredients to pumpkin mixture, and beat until well blended. Pour into a greased 15" x 10" baking pan, or cupcake pans. Bake at 350 degrees for 25-30 minutes 15-20 minutes for cupcakes, or until cake tests done with a toothpick. Cool

I frosted them with Italian Meringue Buttercream and then sprinkled the tops with cinnamon.

German Carob Cake

I love this recipe!  Before you say gross - carob! you have to try this recipe, my husband looked at me and said "it didn't taste like carob" and he was surprised I used 100% wheat flour too.  Now, carob does not taste like chocolate, it tastes like carob and if you are expecting it to taste like chocolate, you will be disappointed.    I love carob as carob and I love chocolate as chocolate, now enough of the lecture - onto the recipe
This is my friend, Chrystal's recipe.  I usually make it as a peppermint carob cake, which is my favorite, but I needed a German Carob Cake, so I used my friend Kristi's recipe for the frosting.  I love it with regular buttercream too.

Cake - ingredients
1/2 cup carob powder
1/2 cup boiling water   (boil it in the teapot and make yourself a cup of tea also!)
2/3 cup butter
1 3/4 cup palm sugar  (go here for more info on palm sugar) or any sugar you wish
2 eggs
2 1/4 cups wheat flour (don't forget to sift!)
1 1/2 tsp baking soda
1/2 tsp salt
1 1/3 cup buttermilk
1 tsp vanilla (peppermint for a peppermint carob cake)

Directions
Pour boiling water into carob, whisking until smooth.  Set aside to cool.
Cream butter and sugar.  Mix in eggs and vanilla.
In a separate bowl - combine flour, baking soda and salt - sifting together.
Add flour to mixture alternating with milk until combined.
Add carob and mix until just blended.  Do not over mix, this will make a dense cake, in fact I usually finish it up by hand mixing it.
Do not expect it to stick to the sides, but I thought it went pretty good with the theme.

Coconut Pecan Frosting originally from Betty Crocker
1 cup sugar
1/2 cup butter
1 cup evaporated milk
1 tsp vanilla
3 large egg yolks (I saw a recipe that called for 5 egg yolks, and I'll try that next time)
1 1/3 cups flaked coconut
1 cup chopped pecans

1.  Mix sugar, butter, milk, vanilla and egg yolks in 2 qt saucepan.  Cook over medium heat about 12-15 minutes, whisking occasionally, until thick.
2.  Stir in coconut and pecans.  Cool about 30 minutes, beating occasionally, until spreadable.

This covered half a sheet cake, but
I think I would want more frosting next time!
The birthday boy gets the biggest piece.  It was his 50th birthday.
I usually double the recipe for church, but after yesterday I realized that our church has grown and next time I will need to make three recipes!
FYI - the baker of the cake always has to serve the cake, so don't forget your apron and hair clip(you don't want hair in the cake!)

Cornbread Salad


I wanted to share a recipe with you that is not my original recipe, I got it from my friend Cara, back when I was still a newly wed (17 years ago!)  It has to be one of my favorite recipes.  I halved the recipe in this picture since there were only two of us eating with enough leftovers for seconds the next day for both of us!  Plus some!  I'll be giving you the recipe for whole recipe.  I'm also adding my tweaks!  The best part is no cooking involved.
Ingredients:
2 cans whole kernel corn (drained)
2 cans pinto beans (drained) or one quart jar home canned pinto beans
3 tomatoes
2 bell peppers
1 bunch of scallion onions (I leave this out since I don't like raw onions)
1 container of "real" bacon bits.  I chopped up about 10 pieces of cooked turkey bacon
3 cups grated cheddar cheese (I like sharp)
1 recipe cornbread (I like Jiffy)
For dressing:
1 packet of powdered ranch dressing (instead I used garlic salt, onion powder, dill, salt, pepper and tablespoon of apple cider vinegar, you can use minced garlic instead if you like a bite)
1 cup sour cream
1 cup mayo

Directions:    You will layer all ingredients
1.  mix dressing and put in fridge
2.  chop veggies and put in fridge
3.  crumble 1/2 cornbread and put in bottom of bowl
4.  1 can of drained corn
5.  1 can of beans drained (or half of quart size jar)
6.  1/2 of the veggies
7.  1/2 of the cheese
8.  1/2 of the bacon bits
9.  1/2 of the dressing
10. start over again

This is a great dish for a potluck!
